The cuvée

Cuvée César is a very limited production, from organically farmed vines at the heart of our Coteaux Varois plots.
A blend of Grenache, Syrah and Cinsault, this rosé breaks free of convention.
Our cellar master, Baptiste Porte, conceived and crafted it with the rigour of a wine made for the table. The result: a gastronomic wine that embraces its substance, its ageing and its ambition.

Terroir

The plot

The César plots are spread across red pelite soils, which gave this spot on the estate its name, “Terrubi”. This “red pelite” soil comes from a rock made of fine, ruby-coloured sediments.

Rich in iron oxides, the pelites hold just enough water to spare the vines excessive stress in the hottest spells of summer, encouraging a slow ripening that gives this very distinctive cuvée its full aromatic power.

In the cellar

Winemaking & ageing

We age half the volume for 6 months in French oak demi-muids, with regular lees stirring.
The oak influence is controlled and perfectly integrated into the wine.
The rest is aged in tank, to preserve aromatic freshness and purity of fruit.
The final blend reveals the full complexity of each component.
