Clay-limestone
Clay holds, limestone drains. This terroir of contrasting balance perfectly regulates the moisture of the soil and gives the wine freshness and saline minerality, so characteristic of Provence Verte.

Fontainebleau en Provence
“There is another Fontainebleau, far from the court of kings, where the water of the waterfalls meets the sun of the Var and nourishes hectares of Provençal vines.”

Our property
Domaine de Fontainebleau nestles at the heart of a triangle of Provence that maps do not show. A secret territory, quietly chosen by some of the most discerning minds.
It is between Château de Miraval, Domaine de Canadel and George Lucas’s land, an hour from Marseille, that Fontainebleau has found its place.
To enter the estate is to step into a sanctuary untouched by time… An exclusive refuge, where untamed nature is the only source of inspiration.
Far from the dry garrigue, here you breathe through its dense forest, its waterfalls and its springs that are never silent. Water is everywhere. In the soil, in the air, in every vine.
This rare magnetism makes Fontainebleau not an address but an experience, one that sets the senses right.

The story
The name Fontainebleau comes from “Fontaine Bello”, in other words “Beautiful Fountains”, most likely given because water is everywhere.
Fourteen fountains and streams criss-cross an estate that has borne this name for almost three centuries.
This unspoilt haven stretches over 135 hectares: 100 hectares of dense oak and pine forest, and 35 hectares of vines spread over several plots, bringing together 17 grape varieties.
Here, the nights are cool and the temperature range generous, giving the grapes the luxury of time. This slow, serene ripening is the secret of our cuvées: it gives them crystalline acidity, mineral tension and an aromatic signature of great finesse.

A distinctive microclimate
Terroir
Le Collet · 200 m
Clay holds, limestone drains. This terroir of contrasting balance perfectly regulates the moisture of the soil and gives the wine freshness and saline minerality, so characteristic of Provence Verte.
Terrubi
A terroir made up of sedimentary rock, producing a clay soil tinted by iron oxides. It absorbs the heat of the day and slowly releases it at night. This thermal inertia prolongs the ripening of the grapes, giving them power and great aromatic richness.
Riverside
A soil that combines sand and silt, richer and more fertile than the estate’s other terroirs. The silt naturally retains the moisture the vine needs, while the sand ensures optimal drainage, preventing any excess water around the roots.

Craftsmanship
Here, nothing is rushed. Skills are handed down, age-old know-how sits alongside the demands of organic farming, and the animals are as much a part of the landscape as the vines.
The estate is certified organic: only copper and sulphur protect the vines. No herbicides, no pesticides, and the rows are naturally grassed, plot by plot.
Our donkeys help look after the vineyard: grazing between the rows, they keep the grass in check and naturally enrich the soil. The most fitting way to farm this place.

The estate’s winemaker since July 2023
The winemaker
The son and grandson of winegrowers, Baptiste Porte grew up a few kilometres from the estate. He has known the vine since childhood, but he chose to travel far before coming back.
An agricultural engineer, he cut his teeth in France’s greatest wine regions, and beyond!
After criss-crossing France, Baptiste set off for Argentina, New Zealand, California and Australia to discover the winegrower’s craft around the world. He came back a few years later with a broad outlook, nourished by the diversity of terroirs and cultures.
In July 2023, he joined Domaine de Fontainebleau and the Provence he loves: an exceptional terroir, among the most singular in the world, where true gems are made.
Around the estate
Around a bend in the path, the estate reveals treasures you would never expect to find.

01At the top of the hill
Perched on its hill, the windmill turns to face the east wind or the mistral, as it did in days gone by. Its period mechanism can still grind flour the traditional way today.

02Consecrated private chapel
Rebuilt on the ruins of an old village and consecrated by the Archbishop of Fréjus, the Romanesque-inspired Sainte-Lucie chapel embodies the serenity of the estate. Its bells ring out over the lavender and the vines, offering an intimate setting in which to celebrate a blessing or pause for quiet reflection.

0318th century
At the top of a succession of olive-planted terraces, Greco-Roman columns overlook the estate. This unusual structure, standing in the middle of nature, is in fact the pediment of a former 18th-century courthouse.

04The 360° view
From its large windows, the panoramic tasting cellar offers a 360° view over an opulent Provence: truffle oaks, a restored hamlet, olive terraces, majestic columns, the back of a chapel and the windmill on its hill.
